Yesterday, after weeks of hard work, we launched #RueSpring – our annual issue welcoming new the season. And with all eyes on warmer weather, we’ve been dreaming of sun-drenched brunches and midday picnics every step of the way. Now that we can finally enjoy the fruits of our labor, we thought it was time for a little celebratory cocktail! Stylist Stella Blackmon is helping us beckon spring with a seasonal twist on everyone’s favorite – the mimosa! We’ll admit, we’ll be enjoying ours this afternoon at the Rue HQ – but this drink would be the perfect addition to all of your upcoming spring parties. Read on, but be ready to take notes. Stella’s thyme simple syrup will be a cocktail essential all summer long:
INGREDIENTS:
THYME SIMPLE SYRUP:
1 cup water
1 cup sugar
2 fresh thyme sprigs
MIMOSA:
1 1/2 oz. apricot nectar, chilled
1/2 oz. thyme simple syrup
3 oz. Prosecco, chilled
INSTRUCTIONS:
Place sugar and water in a small saucepan on medium heat. Stir until sugar dissolves. Remove from heat and add thyme sprigs. Cool completely and remove thyme.
Pour apricot nectar into a glass and stir in thyme syrup. Top the glass with Prosecco. Garnish with thyme sprigs.
