How gorgeous was the tour of Sartre we shared on Tuesday? Today we’ve got a little extra treat from Sartre– the recipe for one of their cocktails! The That Which We Are was created by Sartre’s chef and owner Jim Cornwell and combines cognac with byrrh, which is a wine based aperitif. You can find it at specialty liquor shops or online. We promise it’s worth seeking out.
That Which We Are
1.5oz Pierre Ferrand 1840 Cognac
0.5oz Lucien Jacob Creme de Cassis
0.75 oz lemon
Shake/strain in to a coupe. Garnish with torched fennel.
Editor’s note: If you are not into torching things, just go with a fennel frond instead. Cheers!
