Australian food stylist Lyndel Miller has a knack for creating healthy recipes with incredible flavor. And with photographer Mindi Cooke by her side… well, we’re officially starving. This week, the pair is sharing a recipe for Glazed Salmon Steaks with Brown Rice & Edamame. It’s the perfect weeknight meal and won’t compromise your fitness goals. Enjoy:

INGREDIENTS:
(Serves 4)
4 fresh (or frozen and thawed) salmon steaks
Olive oil spray
2 tbsp sweet soy sauce
3/4 cup long-grain brown rice
1 cup frozen shelled edamame (available at large supermarkets or Asian grocery store)
Juice of 1 lime
1 tbsp rice vinegar
2 tsp sesame oil
4 shallots thinly sliced on the diagonal
Black salt (or salt flakes) and coarsely ground black pepper

DIRECTIONS:
In a medium saucepan, bring one cup of salted water to boil.

Add rice, reduce to a simmer, cover and cook for about 30 minutes.

Add edamame. Cover and cook until rice is tender. This should take about 15 minutes. In a bowl combine lime juice, vinegar and oil.

Add all ingredients and toss. Season with salt and pepper. Set aside to prepare salmon.

Spray a frypan with olive oil and place over medium heat.

Add the salmon fillets and cook for about 2-3 minutes. Turn salmon over, add the soy sauce and cook for about 3-5 minutes, basting occasionally with bubbling sauce.

Remove with slide and serve with edamame and brown rice.
