While we relish time in the kitchen, we’re also all about cutting corners. We love recipes that you can make ahead of time and enjoy when you’re in a culinary pinch. Jasmine (of Jasmine Nicole Photography) is sharing her recipe for Crock Pot Chicken Tacos- one of our favorite In the Kitchen meals to date! The secret is in the salsa you make & freeze beforehand. Then when you’re planning a last minute fiesta or just don’t want to deal with a million ingredients, you can toss a few things into your trusty Crock Pot and check back in a few hours. You’ll end up with an enjoyable and flavorful meal that is both effortless and rewarding… our favorite combination!

INGREDIENTS:
SALSA:
1 28 oz. can of diced tomatoes
3 cloves of garlic
Juice of one lime
1 jalapeño
Handful of cilantro
1 tsp salt

+ 2-3 frozen chicken breasts or thighs

DIRECTIONS:
Add all salsa ingredients to a blender or food processor. Mix until it becomes a thin consistency.

Divide contents into 2-3 freezer bags, & save for a rainy day… or these Crock Pot Chicken Tacos. (Each bag serves 2-3.)

For the tacos, add one bag of frozen salsa + 2-3 frozen chicken breasts or thighs. (TIP: For even more flavor, add frozen corn!)

Cook on low for 3.5-4 hours.

Serve on warm corn tortillas. Garnish with freshly sliced avocado & greens. We also suggest serving with fresh guacamole, roasted salsa, & a pitcher of grapefruit sangria to make the meal a fiesta!
