Today’s recipe comes from someone who knows desserts. In fact- they take up a great portion of her life, and we’re oh-so-jealous. Melissa Johnson is the Founder and Creative Director for Best Friends for Frosting, a blog entirely focused on beautiful and delicious desserts. Having worked at three different bakeries, she has an extensive knowledge of good dessert paired with beautiful presentation. With such a love for food and entertaining, it was a no brainer to have her join us today! This recipe, adapted from Billy’s Bakery, will have you wanting seconds (or maybe even thirds)! Yep, these little cupcakes are just that good. Don’t say we didn’t warn you:

1 3/4 cups cake flour, not self-rising
1 1/4 cups unbleached all-purpose flour
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, cut into 1-inch cubes
4 large eggs
1 cup whole milk
2 teaspoons crushed vanilla bean extract

Preheat oven to 325 degrees and prepare cupcake pans with paper liners. In the bowl of a stand mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt. Mix on low until well combined. Add the butter, and mix until just coated with flour.
In a large measuring cup or bowl, whisk together eggs, milk, and vanilla. With mixer on medium speed, add the wet ingredients in 3 parts, scraping down the sides of the bowl before each addition. Beat until ingredients are incorporated, but be careful not to overbeat.
Divide batter evenly among cupcake liners, filling each about 2/3 full. Bake cupcakes until a toothpick inserted in the center comes out clean, 17 to 20 minutes. Rotate your cupcake pan halfway through baking.
Transfer cupcakes to a wire rack to cool completely. Repeat this process with the remaining batter. Top cupcakes with Vanilla Bean Frosting once cooled.

1 cup (2 sticks) of butter at room temperature
1 teaspoon of crushed vanilla bean extract
1/4 cup milk
2 cups powdered sugar

Beat butter with hand mixer for 3 minutes until fluffy.
Add vanilla extract and beat until incorporated.
Add powdered sugar and milk, alternating 1 cup at a time.
Mix until frosting is fluffy with medium peaks.
