We’re not really fans of the word “diet” and are particularly opposed to deprivation. That said, we know how important it is to eat healthy, well-balanced meals to manage both weight and energy levels! With summer fast approaching, we’re thinking more than ever about quick & easy meals that will keep us happy and healthy. (No, late night Postmates deliveries don’t count!) Fortunately, all-star nutritionist Cara Clark makes eating healthy seem super enticing — her recipes are flavorful and delicious, not to mention super quick! Here are three dishes we’ll be making all summer long:

Veggie-Sausage One Pan Wonder 
Serves 4, Approximately 10-12 minutes.

INGREDIENTS:
4 chicken sausage links (Vegetarian: Omit and swap in ¼ cup toasted pine nuts after cooking.)
1 cup cannellini beans 
2 cup butternut squash 
1 bag shredded Brussels sprouts 
1 bag of broccoli slaw 
1 (6-ounce) can tomato paste 
Sprinkle of nutritional yeast 
Salt and pepper, to taste 

DIRECTIONS:
Add 1 Tablespoon of oil to skillet over medium heat. Add all ingredients to pan and cook until veggies are soft. Season with salt, pepper and sprinkle nutritional yeast on top.

Crispy Asian Salad 

INGREDIENTS:
1 cup shredded cabbage 
½ cup mixed spring greens 
Chopped cucumber 
¼ cup shredded carrots 
Chopped red onion ¼ avocado  
1 small orange or clementine, seeded & diced 
½ cup diced chicken *Vegetarian option: ½ cup chickpeas 
2 Tablespoons slivered almonds 
Chopped cilantro or parsley 

Optional dressing: 1 teaspoon lemon juice + 1 teaspoon raw honey + 1  Tablespoon unseasoned rice vinegar, 2 teaspoons extra virgin olive oil + 1 teaspoon fresh grated ginger + 1 Tablespoon coconut aminos  

Summer Lovin’ Quinoa Bowls
Serves 4 (Not pictured.)

INGREDIENTS:
2 cups cooked quinoa
1 diced bell pepper
1/3 cup chopped green onion
1 mango, peeled & diced
1 cup cooked black beans
1⁄4 cup raisins
3 tablespoons unsweetened coconut flakes
1⁄4 cup balsamic vinegar
Juice & zest of 1 lime
Fresh cilantro, sea salt & black pepper, to taste

DIRECTIONS:
In a small bowl, whisk together the balsamic vinegar, lime juice, and lime zest. Set aside.In a large bowl, combine the remaining ingredients. Pour in the balsamic mixture and gently toss to combine.
